Tahini Coconut Cookies

  • Getting ready for the cherry harvest. Tonight I made some gluten free, vegan cookies. Delicious!
  • 1/3 c tahini
  • 1/3 c peanut butter
  • 3 tbsp melted coconut oil
  • 1/3 c coconut sugar
  • flax egg ( 2 tbsp ground flax, 5 tbsp water)
  • 1/4 c unsulfured shredded coconut
  • 2/3 c almond flour
  • 1/3 coconut flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 c raisins
  • 1/4 c chia seeds
  • 1/4 c chopped walnuts
  • Add wet ingredients into mixed dry ingredients, if too dry moisten with almond milk . I Added chocolate chips to top of cookies.
  • bake 350 for 12-15 min
